This recipe overall is low carb, low sugar and of course, delicious. I used the Organic Whipped Cream from Kalona SuperNatural as my secret ingredient that will make this recipe so moist and extra flavorful... hard to say no to this one!

Whipped Cream Strawberry Pecan Bread Pudding

5 slices of toasted low carb bread (used Eat Royo discount code "PURELYHL")
1/3 cup of unsweetened almond milk
1/2 cup of Organic Whipped Cream from Kalona SuperNatural
1 tsp of vanilla extract
1/4 cup of cashew butter
1/3 cup of granulated monk fruit
1/2 cup of strawberries
1/4 cup of pecans
Preheat the oven at 350F.
Mix the bread with whipped cream, almond milk, monk fruit, cashew butter, vanilla and eggs.
Pour into a 8x8 baking dish and top with strawberries and pecans.
Bake for 20-25 minutes, let cool, cut into 9 pieces and enjoy!
