And guys, these are absolutely epic, easy to make and you only need 4 ingredients. A healthy, low carb and with a very easy vegan alternative that makes these ice cream popcorn bars so hard to resist!

Well, I'm a fan of popcorn, always have been and the fact that it's a gluten free snack and that the ideas with popcorns are endless besides just throwing them into your mouth and hope you catch it, from a good movie night. We can all agree that popcorn is FUN.


These bars are vegan friendly, low carb and gluten free... making us pop about all the valentine's day mood.



For this recipe you can also add some greek yogurt to add some extra protein and some keto ince cream. The base of these amazing popcorn bars, and seriously, these deserve an award on how good and easy they are to make.... ONLY FOUR INGREDIENTS!



For extra flavor and creaminess!

In this recipe I also included some ice cream and greek yogurt to create the mix for the popcorn, feel free to use your favorite ice cream brand I use a Keto Pint in cookie dough, but vanilla also works perfectly!

Loaded with vitamins, minerals from the greek yogurt and protein these bars are truly another level and seriously irresistible! You can even add some collagen powder to add some gut health too for a non vegan option!



To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.

White Chocolate Strawberry Ice Cream Popcorn Bars

Serves 9 servings


Ingredients

Base

  • 4 almond flour tortillas

Ice Cream Mix

  • 1 cup of greek or coconut yogurt

  • 1 small pint of keto cookie dough ice cream

  • 1 cup of Lesser Evil's Popcorn in Sweetheart Pop (Valentine's Day limited edition)


Method

  1. Cover an 8x8 dish using the tortillas.

  2. Mix the rest of the ingredients and pour over the tortillas.

  3. Freeze overnight, cut into 9 pieces and enjoy!
