Raspberry Lemon Pudding Bread with White Chocolate Chips (Low Carb, Single Serving)


Who's down for a good single serving snack or treat? I know that these are always a great idea specially when you've got nothing yet prepared. Been there!


This idea is perfect for these spring and summer days ahead with a huge hint of comfort food. Does anybody else things that pudding bread is a comfort food? This takes me back to my childhood, when one of my favorite aunt's used to make pudding bread for us, but with raisins, at the moment I thought that raisins were nasty so I took them out.


In this occasion I decided to make this recipe EXTRA simple for anyone to enjoy, and if you are still not a fan of raisins then this is going to be a big hit for you! We are changing those raisins for frozen raspberries a good staple to have on your freezer!


Nutrition tip:


- Raspberries are a great source of antioxidants. Essential to fight free radicals from every single day, it's important to consume foods with high amounts of antioxidants since for every free radical death there's also an antioxidant down.

- Raspberries are a great source of vitamin A, B vitamins, zinc and even calcium.

- 1 cup of raspberries has 8 grams of fiber, 14.7 grams in total, so 6.6 grams of net carbs.


I gotta mention that in this recipe we have a good variety of nutrients: calcium, B vitamins, zinc and high quality protein since we are also using ricotta cheese! My latest kitchen staple and ingredient obsession.

Yep, this recipe is keto and low carb! The bread that I used was from my faves at Smart Baking Company, their Smart Bun. What I love about these buns is that the taste is LEGIT, the ingredients are so minimal and for each bun there's 11 grams of fiber and just 15 grams of total carbs.

Raspberry Lemon Pudding Bread with White Chocolate Chips

Ingredients


Method

  1. In a little bowl mix the ricotta cheese, lemon juice, monk fruit, white chocolate chips and raspberries.

  2. Toast the bun and cut into pieces.

  3. Place part of the ricotta cheese in a bowl, followed by some pieces of bread and the rest of the ricotta cheese mix.

  4. And done! Ready to eat, you can also store it in the fridge a couple of hours before eating.
