Apple Biscoff Oatmeal Muffins

Serves 9 muffins
Ingredients
1 cup of raw oats
1/2 cup of vanilla pancake mix (low sugar, used Dilettoso)
1/2 of granulated monk fruit
4 finely crushed biscoff cookies
1 tsp of cinnamon
1 whole egg
2 tsp of vanilla extract
1 (156g) large banana
1 pinch of sea salt
1 small chopped apple
2 crushed biscoff cookies (for topping)
Sugar-Free Glaze (optional)
1/2 cup of powdered monk fruit
1 tsp of vanilla extract
2 tbsp of unsweetened almond milk
Instructions
Preheat the oven at 350F.
Mix all dry ingredients in a bowl.
Add the wet ingredients.
Transfer the batter into 9 silicone muffin cups.
Top with apples and biscoff cookies, sprinkle some water to avoid them from burning.
Bake for 28 minutes and let them cool down.
Mix the ingredients for the frosting.
Top the muffins with frosting, and enjoy!
