Apple Caramel Arroz con Leche

Serves 4
Ingredients
1 cup Super Lucky Elephant Premium Jasmine Rice (uncooked)
1 cup water
1 cup milk
1 teaspoon cinnamon
2 teaspoons Mexican vanilla extract
1/2 tablespoon butter
1 cup chopped apple
1/2 cup condensed milk
5 caramel pieces (chopped)
Instructions
In a pot, combine jasmine rice, water, and half of the milk. Bring to a boil, then cover and simmer on low heat for about 15 minutes until the liquid is absorbed.
Meanwhile, in a skillet, cook chopped apples with butter, caramel, and 2 tnsp of milk, cinnamon, until they soften. Set aside.
Once the rice is cooked, stir in the remaining milk and condensed milk, simmer for 6 minutes, stirring occasionally.
Serve topped with apple caramel mix for an added touch of sweetness and texture. Enjoy!
