Serves 2


Ingredients

  • 4  waffles

  • 2 slices of Sonoma Garlic Jack

  • 2 slices Sonoma Hot Pepper Jack

  • 6 slices of bacon

  • 1 tbsp of chives

  • 3 whole eggs (whisked)

  • Salt & pepper to taste (for eggs)

  • 2 tbsp of mayonnaise


Instructions

  1. Cook bacon until crispy, set aside—keep that bacon fat!

  2. Whisk eggs, season, scramble in the same pan.

  3. Spread mayo on waffles.

  4. Layer Sonoma Garlic Jack, Hot Pepper Jack, bacon, eggs, and chives between two waffles.

  5. Grill in leftover bacon fat until cheese melts and waffles are golden.

  6. Slice and enjoy!
