Bacon Jalapeño Shrimp Cakes

Serves 7 cakes


Ingredients

Shrimp

  • 1 lb of cleaned peeled shrimp

  • 2 pieces of slightly cooked bacon

  • ½  tsp of garlic powder

  • 1/2 tsp of sea salt

  • 1 large chopped jalapeño

  • ⅛ tsp of black pepper

  • ½  tbsp of dried Italian herb

Cottage Cheese Sauce

  • 1/2 tsp of sea salt

  • 1/8 tsp of black pepper

  • 1 tsp of garlic

  • 1 cup of cottage cheese

Serving

  • 1 tbsp of chopped cilantro

  • 1 tsp of red pepper flakes


Instructions

  1. Preheat the oven at 350F.

  2. Place the shrimp in a food processor, add the seasonings, jalapeño and bacon.

  3. Pulse until fully incorporated, about 30 seconds in high.

  4. Create 6-7 shrimp cakes.

  5. Bake for 18-20 minutes.

  6. Blend the ingredients for the cottage cheese sauce.

  7. Serve the shrimp cakes on a plate, top with cottage cheese sauce.

  8. Sprinkle cilantro and red pepper flakes.

  9. Enjoy!
