Inspired by some of of the recipes from my favorite Mexican restaurants. A delicious easy to make high protein and low carb comforting black bean and cheese empanada. Easy to make, baked and just a crowd pleaser, you really need to make this recipe, great for meal prep as well!


There's something about cheese and beans together that it just so special and delicious, I decided to incorporate them in this gluten-free lower in carb empanada recipe! This will make a great healthy and fun recipe for you to make for your family, picky eaters? Give this a try!

This is extremely easy to make and extremely flavorful! The ingredients are simple and short, and the process of making these is just as minimal and easy, you'll be surprised... your guests and their tastebuds! This recipe is perfect no matter the occasion but I wanted to add a little fun twist by stuffing these empanadas with cheese and black beans... Inspired by some of of the recipes from my favorite Mexican restaurants.


Using also some California Country Gal GF Pizza Dough Mix and Siete Foods Mashed Black Beans, this recipe is made with all high in protein, fiber, and low carb ingredients that will please your tastebuds in every bite.



What's in these Black Bean & Cheese Empanadas?

As I mentioned earlier, I used California Country Gal GF Pizza Dough Mix and Siete Foods Mashed Black Beans which are super versatile and made with just simple ingredients, perfect for your burritos, tacos and all your Mexican comfort foods! Along with the seasoning, cheese and some taco seasoning.


I used baby bell light cheese wheels, the perfect size and creates that amazing cheese pull. As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste.

This are easy to make, comforting, flavorful and so addicting! I'm obsessed, and since I have always been a fan of cheese with beans, the combination has something I wanted to recreate for a while now... This recipe is definitely a winner!


Gosh! It was good. It's such an easy comfort food; saucy, warm and with a nice touch of the cheese pull and black beans... pure Mexican Comfort.

I enjoyed mine for dinner or lunch, alone and by the forkful in a big bowl of those veggies and of course, my low carb tortillas as well! A recipe worth making again no matter the season, perfect to share with your friends and family!

Black Bean & Cheese Empanadas

Serves 6 servings


Ingredients.

Empanada Dough

  • 1 pack of California Country Gal GF Pizza Dough Mix

  • 1/2 cup of egg whites

  • ½ cup of warm water

  • 1 tsp of garlic

  • ½ tsp of pink salt

  • ⅛ tsp of black pepper

  • ½ tsp of taco seasoning

Filling

  • 6 pieces of baby bell light cheese pieces

  • 2/3 cup of Siete Foods Mashed Black Beans

  • Pico de Gallo for Garnish

Method.

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the empanadas and then incorporate the wet ingredients.

  3. Create 6 balls with the dough, carefully using your hands fill them with the cheese and black beans (without over-stuffing with beans) and seal carefully.

  4. Place them in a baking dish and bake for 18-20 minutes.

  5. Serve with pico de Gallo and enjoy!
