Caramel Chocolate Apple Muffins (Paleo & Keto)

Okay, so now that we are in September there are a few exciting things happening! This is one of my favorite month’s of the year since the fiesta is starting!


A few reasons why I love September:

  • Mexican Independence Day

  • The begging of fall

  • Pumpkin and apple season begins



So we have a lot of food faves coming this month. From mexican recipes to fall inspired recipes! And since I already posted a pumpkin inspired recipe now it’s turn to post a good apple recipe!


Say hello to these delicious bad boys! These are my Caramel Chocolate Apple Muffins!


These little and delicious muffins are great to share with your family and/or friends! And a great way to prove that a healthy and lo carb recipe can be epic on so many levels!


Clean, simple paleo ingredients!

  • Coconut flour

  • Almond flour

  • Eggs

  • Granulated monk fruit (PURELYHL for discount✨)

  • Caramel keto coffee creamer

  • Apples

  • Pecans

  • Dairy free chocolate



So as you can see, there’s only simple and clean ingredients. This is one of the other reasons I say that these are perfect to share!

Toppings!

Toppings are essential when it comes to a good muffin recipe; so in this case we are toppings things up very nicely with some dairy free chocolate which is also low carb, pecans because they are also great for the fall vibes. And of course, apples beautifully chopped... well, chopped!



No need to bother with a frosting since the apples, chocolate and nuts make them look adorable just as they are!


The steps for this recipe are also super basic because I am all about making everything so uncomplicated. We could focus that energy somewhere else! In the meantime, a very easy and healthy recipe.



Easy peasy steps:

  1. Preheat your oven at 350F.

  2. Mix the dry ingredients in a bowl.

  3. Add creamy coffee creamer or ghee, eggs and liquid. Mix well.

  4. Pour the mix into twelve silicone muffin cups.

  5. Top with chopped apples.

  6. Bake for 25 minutes.

  7. Add melted chocolates and finish up topping it nuts.



The experience is DELICIOUS! They turned out super lovely, soft, puffy and flavorful! The combination of flavors and textures are fantastic together. Every bite is a great experience to our tastebuds!


Perfect sweet snack for meal prep!


These are great for meal prep since the size is the perfect size and this recipe makes twelve servings! And because the steps are simple you can even make a double batch. Also, you can freeze them in a plastic bag or container and have them ready to satisfy that sweet tooth in a delicious low carb way.

Ingredients

  • 3/4 cup of coconut flour

  • 1/4 cup of almond flour

  • 3 eggs

  • 1/3 cup of granulated monk fruit (PURELYHL for discount✨)

  • 3 Tbsp of liquid keto coffee creamer or melted ghee, coconut oil or butter.

  • 2 scoops of caramel Coffee Creamer in powder (optional)

  • 1 tsp of baking powder

  • 1 tsp of cinnamon

  • 1 sprinkle of clove and nutmeg


Toppings

  • 1 (153g) chopped apple

  • 1/4 cup of pecans

  • 2 bars (60g) of dairy free chocolate

Method

  1. Preheat your oven at 350F.

  2. Mix the dry ingredients in a bowl.

  3. Add creamy coffee creamer or ghee, eggs and liquid. Mix well.

  4. Pour the mix into twelve silicone muffin cups.

  5. Top with chopped apples.

  6. Bake for 25 minutes.
