Chocolate Almond Ice Cream Pies (Low Carb)


Now that summer days are upon us a good ice cream recipe sounded like a great idea, plus it has been a while since I have been wanting to try a keto/low carb ice cream for a while. I will get more into detail below, but for now let's focus on the basics of the recipe.


Since we have been in lockdown (I'm currently writing this during quarantine) my freezer is pretty much stocked with all the goods. I'm feeling extremely grateful for that and that I still have the opportunity to create fun recipes to keep my entertained and sane during these times.


With this recipe I wanted to step up the game of the typical ice cream treat and I wanted to create a delicious recipe combining different flavors and textures while keeping it low carb, diabetic friendly and enjoyable.


I can tell for you fact that this recipe hits the spot! For each serving we have 8.8 grams of protein making this a great filling afternoon snack or post workout. This recipe is also very low in net carbs since the ice cream I use (Real Good Foods) has allulose as a sweetener.


This is made from natural food sources and it doesn't have a glycemic impact. It's also keto friendly and it doesn't have a weird after taste.


As for step up I wanted to add a chocolate mint base using Natural Force - Organic Plant Based Protein in Chocolate Mint Flavor. This is one of the best brands, all of their quality is amazing, minimal ingredients, great sources and the taste is amazing.

Anyways, back to this recipe. Yes! The base is made from their Chocolate Mint Protein Powder, topped with this low carb ice cream, some chopped almonds and Magic Spoon Cereal! My favorite low carb, keto friendly cereal that always takes me back to my childhood.

Chocolate Almond Ice Cream Pies

Serves 12

Ingredients

Base

- 1 cup of water

Middle

- 2 containers (32oz) of low carb Chocolate Ice Cream

Toppings

- 1/4 cup (30 grams) chopped almonds

Method

1. In a bowl mix protein powder and water. Pour the mix into twelve silicone muffin cups.

2. Top with creamy ice cream.

3. Add the cereal and chopped almonds equality into each pie.

4. Freeze for a couple of hours and ENJOY!
