Enchiladas are such a Mexican classic! Here we are taking the inspiration of this iconic Mexican recipe along with some delicious gluten free, paleo and vegan friendly almond flour keto tortillas from Maria and Ricardo's. Stuffed with a creamy and dreamy avocado mousse!


The easiest and yummiest dessert enchiladas! One of the best parts of this recipe is that it's keto friendly, lower in sugar, gluten free and vegan. It doesn't matter how good you are in the kitchen, this recipe is extremely easy to make and perfect to make for a crowd!



About these Chocolate Mousse Enchiladas:

These are not the usual enchilada recipe, that part is very clear... we are going to be making dessert enchiladas! We are keeping the recipe low carb, vegan and keto friendly and also nourishing... using simple ingredients that are also good for you.


To keep it vegan, keto friendly and gluten free by using Almond Flour Keto Tortillas from Maria and Ricardo's, avocado, cacao and vegan vanilla pea protein. So we are focusing on simple wholesome ingredients, everything nutrient dense.

Adding some avocado for the mousse and vegan protein to create a thicker and more satisfying recipe. And well, of course the tortillas are absolutely essential for every enchilada recipe, this case is no different.


I used the Almond Flour Keto Tortillas from Maria and Ricardo's that I found at my local Whole Foods in the freezer aisle. In this occasion I used the Almond and Flaxseed tortillas but they also have Everything and Sea Salt, all three are vegan, paleo and keto friendly.

Chocolate Mousse Enchiladas

Serves 8 servings


Ingredients


Method

  1. Preheat the oven at 350F.

  2. In a food processor or blender add the avocado, cacao powder, pea protein and monk fruit and pulse until fully smooth.

  3. Microwave the tortillas for a few seconds (about 30 seconds) to make them softer and easier to roll.

  4. Add a spoonful of the mix in each tortilla and roll them carefully. Place them in a baking tray.

  5. Bake them for 12-15 minutes.

  6. Let them cool and top with leftover avocado mousse and chocolate chips.

  7. Serve and enjoy!
