Serves 4 cups


Ingredients

  • Lady Fingers

    • 1 cup Dilettoso Gluten-Free Amore Mix in Va Vanilla

    • 3 large eggs, separated

    • 1/2 cup (100 g) granulatedmonk fruit

    • divided (about 

    • 1  yolks

    •  6 tbsp of egg whites

    • 1 tsp vanilla extract

    • 2 tbsp cornstarch 

    • Powdered sugar for dusting

    • Pinch salt

  • Lady Finger Soak

    • 1 1/2 cup of americano coffee

    • 1 tsp of vanilla extract

  • Cream Layer

    • 2 cup of mascarpone cheese 

    • 2 tbsp of cornstarch

    • 1/2 cup of granulated monk fruit

    • 2 tsp of vanilla extract

    • 1 tsp of almond extract

  • Topping

• • Chocolate Easter Eggs


Instructions

  1. Prepare Lady Fingers: Preheat the oven to 350°F (175°C). Whip egg yolks with half the monk fruit and vanilla until light and fluffy. Gently fold in the Dilettoso mix and cornstarch. In a separate bowl, whip egg whites with a pinch of salt until soft peaks form. Fold the whites into the yolk mixture. Pipe ladyfingers onto a baking sheet and dust with powdered sugar. Bake for 10–12 minutes, then cool.

  2. Soak: Mix the americano coffee with vanilla extract. Quickly dip each ladyfinger into the coffee mixture and layer them in your serving cups.

  3. Prepare Cream Layer: Beat mascarpone with the remaining monk fruit, cornstarch, vanilla extract, and almond extract until smooth. Spoon a layer over the soaked ladyfingers in each cup.

  4. Assemble: Repeat the layers until cups are filled. Top with chocolate Easter eggs for a festive finish!

  5. Chill & Serve: Refrigerate the cups for at least one hour before serving to allow flavors to meld.
