Ingredients

Pretzel Layer:

Cheesecake Layer:

  • 1 cup cream cheese (softened)

  • 1/2 cup cottage cheese

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 1/3 cup monk fruit sweetener

  • 2 eggs

Topping:


Instructions

  1. Preheat your oven to 350F.

  2. Crush the pretzels into fine crumbs, then mix with melted coconut oil and vanilla.

  3. Press this mixture into a silicone loaf dish and bake for 10 minutes.

  4. In a blender, combine all cheesecake ingredients including cream cheese, cottage cheese, cinnamon, vanilla, monk fruit, eggs, and gelatin. Blend until smooth.

  5. Pour the cheesecake batter over the baked pretzel crust.

  6. Bake for 35 minutes. Let cool completely.
