Raspberry Chocolate Truffles

Serves 10
Ingredients
Truffles:
1 1/2 cups gluten-free flour
1/2 cup plant-based vanilla protein powder
1/3 cup maple syrup
1/3 cup Nutiva Organic Coconut Oil
1/4 cup sugar-free dark chocolate chips, melted
1 cup freeze-dried raspberries
Coating:
1 cup sugar-free white chocolate chips
1 tbsp Nutiva Organic Coconut Oil
2 tbsp crushed freeze-dried strawberries
1 tbsp chopped pistachios
Sea salt flakes, to taste
Instructions
In a large bowl, whisk together the gluten-free flour, Nutiva Organic Hemp Seeds, plant-based protein powder, and freeze-dried raspberries.
Stir in the maple syrup, melted Nutiva Organic Coconut Oil, and melted dark chocolate until well combined.
Shape the mixture into 10 golf ball-sized truffles and refrigerate for about 15 minutes.
Melt the sugar-free white chocolate and Nutiva Organic Coconut Oil using a Bain Marie or microwave method until smooth.
