Raspberry Chocolate Truffles

Serves 10


  • Ingredients

  • Truffles:

    Coating:

    • 1 cup sugar-free white chocolate chips

    • 1 tbsp Nutiva Organic Coconut Oil

    • 2 tbsp crushed freeze-dried strawberries

    • 1 tbsp chopped pistachios

    • Sea salt flakes, to taste


Instructions

  1. In a large bowl, whisk together the gluten-free flour, Nutiva Organic Hemp Seeds, plant-based protein powder, and freeze-dried raspberries.

  2. Stir in the maple syrup, melted Nutiva Organic Coconut Oil, and melted dark chocolate until well combined.

  3. Shape the mixture into 10 golf ball-sized truffles and refrigerate for about 15 minutes.

  4. Melt the sugar-free white chocolate and Nutiva Organic Coconut Oil using a Bain Marie or microwave method until smooth.

  5. Dip each truffle in the melted white chocolate, then sprinkle with sea salt flakes, pistachios, and crushed strawberries.

  6. Return the truffles to the refrigerator for a few more minutes until set. Enjoy!
