Cranberry Lemon Mini Tarts

Serves 4 tarts
Ingredients
For the Tarts:
1 cup gluten-free puff pastry sheet (used Sweet Loren's)
1 egg (for egg wash)
For the Filling:
1 pack of Simply Delish Lemon Sugar-Free Pudding (using code PURELYHL for a discount)
1 ¼ cup unsweetened almond milk
For the Frosting:
¼ cup fresh cranberries
2 tbsp caramelized orange peel
Instructions
Preheat the Oven: Begin by preheating your oven to 425°F (220°C).
Prepare the Puff Pastry: Roll out the gluten-free puff pastry. Cut three different circles: one large, one medium, and from the medium circle, cut a smaller circle to create a ring.
Assemble the Tarts: Place the ring pastry over the larger circle, and set the smaller circle aside as it will not be used.
Egg Wash: Brush the egg wash over the pastry and bake for 15 minutes or until golden brown.
