Everything Bagel Fajita Skillet (Paleo & Low Carb)

Iron skillet recipes have been on repeat lately, sorry not sorry! There are just so many reasons to love them; they are practical, makes comfort foods, perfect for meal prep and less mess in the kitchen. How to say no to that?


Well, this Everything Bagel Fajita Skillet was inspired by my one and only Pizza Pocket Skillet. Only that in this recipe I used Mikey's Ham And Cheese, paleo with plant-based cheese. That will create that bagel part of the recipe. Trust me, this is good!



Another thing about iron skillets is that you can create fun recipes, it's basically my twist of a casserole, just in an iron skillet so I you don't have one you can still use a 8x8 baking dish. The flavor doesn't change.



Well, you also know me. All about the Mexican hints in every recipe and in this occasion I decided to add some pico de gallo into the recipe, also to add some nutritional value; vitamins, minerals and some fiber from the veggies included in the pico de gallo: tomato, onion, cilantro and jalapeño.



Loaded with vitamin C from the pico de gallo, we've also have some organic eggs that are packed with lutein, vitamin D3 and omega-3 fatty acids, the healthy fats from eggs also help in the absorption of vitamins such as (A, E, K and D).



The everything bagel seasoning is loaded with seeds, that also add that amazing flavor to the recipe (the everything bagel seasoning hype is real!) and some healthy fatty acids, vitamin E, magnesium and some selenium too. They are just little power houses.


Overall, here are the ingredients for this Everything Bagel Fajita Skillet:

  • Mikey's Ham And Cheese (PURELYHL for discount)

  • Pico de gallo

  • Eggs

  • Broth

  • Everything bagel seasoning

  • Sea salt

  • Dried garlic

  • Black pepper



Simple and minimal ingredients that together create this amazing and flavorful casserole... or in this case skillet. Perfect whenever you host your next brunch, for breakfast meal prep or if you are team breakfast for dinner like me, then this is also a great candidate for dinner.



The magic of using simple ingredients, healthy eating doesn't have to be boring or complicated right? There are so many ways we can use the daily foods; eggs veggies, seasonings to create different recipes that will make eating healthy a whole experience!



I enjoyed this as my dinner paired with some roasted veggies, you can also top it with sauce is that your thing, maybe paired with baked sweet potatoes and done! A great and healthy meal that you can keep in your fridge, this was gone so fast though.



And yet, once it's cooled down you can totally save this in some glass containers or freeze for later. This was gone in just a few minutes but definitely going to make a second batch since everyone loved it!

Everything Bagel Fajita Skillet

Serves 8


Ingredients

  • 1 + 1/2 of Mikey's Ham And Cheese (PURELYHL for discount)

  • 1 cup of pico de gallo

  • 4 eggs

  • 1 cup of broth (I used bone broth)

  • 1 tbsp of everything bagel seasoning

  • 1 tsp of sea salt

  • 1/2 tsp of dried garlic

  • 1/8 tsp of black pepper


Method

  1. Preheat the oven at 350F.

  2. Bake the ham and cheese pockets for 10 minutes.

  3. In a bow beat the eggs and add seasonings, except for everything bagel seasoning.

  4. Add the bone broth.

  5. Pour the egg mix into an iron skillet greased or with waxed paper.

  6. Cut the pockets into pieces.

  7. Top the egg mix the pockets.

  8. Bake for 30 minutes.

  9. Cut into 8 equal squares.

  10. ENJOY!
