Jalapeño Football Poppers (Keto & Gluten Free)

By now I think that there's no such wrong way of eating ground beef, right? This is such a versatile and easy to prepare meat; from burgers to meatballs! But in this occasions since I'm in the mood for the Super Bowl thanks to my amazing boyfriends I'm preparing something for Sunday foot ball!


There's something about roasted jalapeños in a cheese that instantly creates a magical and delicious recipe! And since jalapeños are been a staple in my fridge for a couple of... years? I thought it was time to share this amazing recipe along with that cheese factor from mozzarella cheese and nutrient dense grass-fed beef from Butcher Box.



About these Jalapeño Football Poppers:

This is extremely easy to make and extremely flavorful! The ingredients are simple and short, and the process of making these is just as minimal and easy, you'll be surprised... your guests and their tastebuds! This recipe is perfect no matter the occasion but I wanted to make them into a football ball!


The pork panko as our thickerner agent while skipping any flours from nuts or grains, in this recipe is just a perfect gluten free and keto friendly ingredients and thanks to the nature of them, along with the goat creates the ultimate comfort food.



What's in these Jalapeño Football Poppers?

As I mentioned earlier, I used Butcher Box grass-fed ground beef, pork panko, goat cheese, bone broth for the extra gut health, taco seasoning and of course our main ingredient, jalapeños! The seasonings included in this recipe are real salt, black pepper, garlic powder and some taco seasoning.


You can even pair this recipe with some cauliflower crusts or keto tortillas! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste.


The ideas go beyond plain boring salads, for example... I remember growing up, my mother served me steamed cauliflower with mayonnaise, sounds crazy but it works!

  • Pork Rinds

  • Grass-Fed Beef - used Butcher Box

  • Bone Broth

  • Goat Cheese

  • Jalapeños

  • Taco Seasoning

These were great as a snack, side dish and even as a low carb salad if you switch the pork rinds! Remember to keep ingredients wholesome and pick wisely! I love having marinara sauce, with no sugar added on my pantry just because it goes so well in so many recipes, this is a clear example!

The end result

These are easy to make, cheesy, flavorful and so addicting! I'm obsessed, and since I have always been a fan of bone broth, jalapeño and pork rinds... all together is just a pleasant experience.


Gosh! It was good. It's such an easy comfort food; saucy, warm and with a nice kick of jalapeños.

I enjoyed mine for dinner or lunch, alone and by the forkful as a snack! A recipe worth making again no matter the season, while watching movies or to give them to the kiddos as a fun snack! At the end it's hard to resist these creamy, saucy and flavorful jalapeño goat cheese and grass-fed beef combo while getting some vitamin C and omega-3's from it.



Not boring or complicated! This are a great lunch for kids and grown ups. Pro tip: You an use pickled jalapeños to top these pork rinds and add a little extra spice!

Jalapeño Football Poppers:

Serves 6 servings


Ingredients

  • 16oz. of grass-fed ground beef

  • ¼ cup of crushed pork rinds

  • 1 egg

  • 1 tbsp of Kettle & Fire beef bone broth

  • 1 jalapeño (finely chopped)

  • ¼ cup of shredded cheese

  • 1 tsp of pink salt

  • 1 tsp of garlic

  • ½ tsp of black pepper

Topping

  • Cheese to create the lines for the ball

Method

  1. Preheat the oven at 350F.

  2. Mix all the ingredients in a bowl.

  3. Create 5 poppers in the shape of a football ball.

  4. Bake for 24-28 minutes.

  5. Take out of the oven and top with cheese to create the football lines.

  6. Serve with vegetables, keto ranch and enjoy!
