Keto Fajita Chicken Bake (Gluten Free!)

We all have comfort foods; from the ones that bring up memories to the ones that from their ingredients makes a magical reaction in our brains that makes us feel happy. And this recipe is just like that, that magic food that bring so much joy.


Cali'flour Foods has been a staple for a while now because of their minimal ingredients; cauliflower, mozzarella, spices and egg whites. THAT'S IT! And the ways of using them are endless, plus the taste is amazing. I'm really a huge fan.



I personally have tried their pizza crusts (in all flavors; sweet bell pepper, original italian and spicy jalapeño) and their flatbreads. All of them are keto friendly and you can REALLY tell that their are made with fresh ingredients.



More than just a pizza crust, you can create anything you want using their flatbreads or crusts:

  • Pizzas

  • Chicken bakes



In this occasion I wanted to step up the game and create a comfort food for me, a fun and cheesy recipe that you might be familiar with. Chicken bake, with my Mexican twist and will be adding some bell peppers and Mexican cheese!


If you are not familiar with this recipe A chicken bake is savory pastry stuffed with juicy chicken, cheese and bacon combination. Simply epic, and it's so satisfying, probably the bacon and cheese that makes this recipe so good!



Anyways, since we are keeping this recipe KETO and GLUTEN FREE, we are using some of Cali'flour Foods Traditional Italian Cauliflower Pizza Crusts (PURELYHL for discount) as our "pastry" or wrapper and the essentials; chicken, bacon and cheese.


As I mentioned before the ingredients are great, simple and delicious! Each crust (the whole crust) has only a total of 6 grams of carbs and 3 grams of fiber. That makes ONLY 3 net carbs. Hard not to love them!



Here's what you'll need for these Keto Fajita Chicken Bake:



The cooking method is simple, I just cut two of the round ends of the cauliflower crust, stuffed the crust with the ingredients and roll it using a bamboo sushi rolling mat. Placed it in a baking tray and baked it! You can also use your air fryer, the full instructions will be below along with the nutritional information per serving.


It might be tricky but I have all the instructions and alternatives in case your crust crumbles apart in the process of rolling it; that might be cause of a super stuffed fajita chicken bake or else.

The results

EPIC! Cheesy, juicy and crispy! If you have an air fryer you can use it, place them 5 minutes at 400F to get them extra crispy, my dad roasted his in a skillet along with some ghee. But those are just ideas! They are good as they are.


You can have this along with some roasted veggies, in a fresh salad in a gorgeous bowl or even alone! The ideas are endless.

Keto Fajita Chicken Bake

Ingredients


Method

  1. Preheat the oven at 350F.

  2. Place your Cali'flour crust (un frozen) in a sushi rolling mat or waxed paper.

  3. Cut two of the round ends of the crust.

  4. Stuff with the ingredients in a horizontal way, from the side you sliced to the other end.

  5. Roll it very carefully, it might crumble apart. (if it crumbles apart, wrap it aluminum paper to roll it back together).

  6. Place them in a baking tray and bake for 25 minutes. If you are baking it in aluminum bake for 20 minutes, unwrap it and bake for other 10 minutes.

  7. Slice each chicken bake into 4 pieces, serve along with some vegetables.

  8. ENJOY!
