For this recipe I kept is very simple but I also wanted to add a twist of some fall flavors such as maple and cinnamon so for that level up I included some protein clusters in maple that will just add that crunch to this epic recipe. We are keeping it gluten free as well!

But I'm also using protein clusters to add a little of extra crunch to the recipe, the ones I'm using are from Iwon Organics. The chunks in here are huge and so tasty so you can bet they did a great job in this recipe.

Maple Cinnamon Monkey Bread

Serves 4-8 servings


Ingredients

Base

  • 1/2 cup of almond flour

  • 1/2 cup of coconut flour

  • 1/2 cup of Nuzest vanilla pea protein (PURELYHL for discount)

  • 1 tsp of cinnamon

  • 1 tsp of baking soda

  • 1 cup of Iwon Organics - Maple Protein Granola Clusters

  • 1 egg

  • 1 tsp of vanilla extract

  • 2 tbsp of MCT Oil

  • 1 cup + 2 tbsp of greek yogurt

  • 1/4 cup of monk fruit


Toppings

  • Leftover Granola


Method

  1. Preheat the oven at 350F.

  2. Add the pea protein (can substitute for coconut flour), the granola, baking soda, cinnamon monk fruit, coconut and almond flour.

  3. Add the MCT, egg, greek yogurt, vanilla extract and mix well.

  4. Transfer to a silicone silicone dish.

  5. Bake for 30-35 minutes.

  6. Cut into 4-8 pieces and enjoy!
