We all love a good classic, but adding a personal touch or a little tweak just makes your favorite recipes into something else... special! And inspired by the classic neapolitan, a tri-colored or tri-flavored dessert that I love!


I am describing these waffles as a breakfast since a lot of us tend to relate fruit with breakfast, something fresh! And also something with protein, so these waffles is packed with those healthy fats and protein that will keep you satisfied and ready to crush your day. These flavorful waffles feature three flavors; peaches, chocolate and vanilla.

How can we say no to a good waffle recipe? There's something irresistible about the taste and texture that I just couldn't resist making a waffles recipe. As mentioned earlier, this a tri-flavored recipe that includes one chocolate waffles, one vanilla waffle and a creamy filling featuring greek yogurt and peaches.


And of course, all coated in greek yogurt to create the "cake pop" effect.


In this recipe we are using simple ingredients and nutrient dense. From greek yogurt for that filling, eggs and almond flour for the waffle mix and some grass-fed whey protein for the chocolate waffles.


Key Ingredients:

Adding some protein powder for those chocolate waffles and a satisfying filling. I have been also obsessed with the Marigold Rich Chocolate Whey Isolate! and for the vanilla waffles I used Nuzest Smooth Vanilla Plant Based Protein, their ingredients are always the best, as well as the taste is always delicious too, this chocolate whey is basically a healthy, dreamy and indulgent chocolate milk shake (keto and gluten free!).


Soft and epic waffles; paleo, low carb and dairy free. Always down for a challenge when it comes to recipes and I'm making it easier for you because you just have to follow the instructions; the mess was already made by me.

And because we all love a good classic I decided to incorporate some peaches left from this season to give that amazing and special effect on these waffles. You are going to simply love them, plus we get the drizzle of the almond butter on top, just the perfect topping for this combination of flavors!



You can have fun with this recipe and choose one of your favorite healthy nut butter. In this occasions since I wanted to kept it plant-based and gluten free by choosing a this one from Sarai's Spreads on cinnamon maca.

A very complete recipe here! They key is always choosing better ingredients; in this occasion we are adding that sweetness with granulated monk fruit as a replacement of regular sugar that has a lower impact in blood sugar.


The healthy fats from the almond flour and the protein from Nuzest and greek yogurt. This is just a very satisfying recipe that will be a perfect pair to your favorite latte.

A soft inside with the perfect crispy outside. These waffles are flavorful and easy to make that will even be great to make with your kids, or by anyone with little experience on baking. The texture of the the peaches along with the chocolate and vanilla waffle is just perfect!


As dessert, snack or breakfast! These waffles are just a dream that make me want to restock on all the peaches and eat these all year long... no joke. I'm a huge fan of peaches, chocolate and waffles.



Perfect to enjoy at any time of the day; morning or evening. These can be also stored in the freezer and warmed once you need to satisfy that sweet tooth without all the inflammatory effects from gluten and sugars.


Pro tip: You can even air fry the waffles a couple of minutes (2-3 minutes) before adding the filling for a crispier experience! You can also add your favorite toppings!

Peach Neapolitan Waffle Sandwiches

Serves 3 servings


Ingredients

For the Waffles

Filling

  • 1 cup of greek yogurt

  • 1/2 cup of frozen peaches

  • 2 tbsp of monk fruit

  • 4 tbsp of Cinnamon Maca Almond Butter (used Sarai's Spreads)

Coating

  • 1 cup of greek yogurt

  • 2 tbsp of monk fruit


Method

  1. Preheat the your waffle maker.

  2. Mix the ingredients for the waffles.

  3. Pour about 1/4 cup of the batter into the waffle maker and cook for 4-5 minutes.

  4. Let them cool down.

  5. Make three waffles with the vanilla mix and once you made those three add one scool of the grass-fed chocolate whey, mix well and cook the rest of the waffles.

  6. In a little bowl mix the greek yogurt, with a touch of monk fruit.

  7. Top two of the waffles with the greek yogurt mix, add the peaches, add the stick yo create the popsicles and top with the other half of the waffles.

  8. Freeze for a couple of hours.

  9. Mix the ingredients for the coating and once the waffles are hard enough, cover them with the coating mix of greek yogurt and freeze again.

  10. Add your toppings and enjoy!
