Waffles for dessert, I'm always down for that! Especially when there's ice cream involved, this recipe is just perfect no matter the season and also for any cooking skill level... this is a very easy recipe to prepare with no gluten and low carb!


Grab some low carb waffles or your favorite ones, some keto friendly ice cream and let's get started with this recipe. Super quick to make and also will be gone in minutes... I devoured these so quick!

This recipe is seriously SUPER easy to make, you are going to be surprised and even want to make it on repeat because it's just the perfect dessert! Just by using the right ingredients, healthier options and done! You've got yourself an epic dessert!


In this recipe we are going to keep it very simple, I use Grain Free Chocolate Chip Waffles from Real Good Foods and their ice cream too, they are just a brand that I truly love and they just offer great products, in this occasion I used their chocolate chip waffles and their Peanut Butter Chocolate Chip Ice Cream.


Both are delicious gluten free and low carb options! TRUST ME.



Soft and epic waffles; low carb and grain free. Always down for a challenge when it comes to recipes and I'm making it easier for you because you just have to follow the instructions; the mess was already made by me. These waffles I bought them online but their ice cream is available at super markets such as Wal-Mart or Target.


You can also use your own waffle recipe... will be trying that next time but in this occasion I couldn't resist getting their chocolate chip waffles.



To make the waffle cones or cups I simply let the waffles at room temperature so that way they were soft, later I soaked them in egg whites mixed with cinnamon and monk fruit and place them in a muffin cup. EASY PEASY.


And because we all love a good classic I decided to incorporate some peanut butter ice cream along with the chocolate chip waffles, just a match made in heaven! It gave that amazing and special effect on these waffles. You are going to simply love them, plus we get the crunch of the chocolate piece on top!



You can have fun with this recipe and choose one of your favorite healthy ice cream flavor; chocolate chip, chocolate mint, vanilla... the ideas are endless! In this I was feeling a classic peanut butter one along with some strawberries that are still on season.

As dessert or snack! These waffles are just a dream that make me want to restock on all the waffles and ice cream, and probably eat these all year long... no joke. I'm a huge fan of peanut butter ice cream, chocolate and waffles.



Perfect to enjoy at any time of the day; morning or evening. These can be also stored in the freezer and warmed once you need to satisfy that sweet tooth without all the inflammatory effects from gluten and sugars.


Pro tip: You can even air fry the waffles a couple of minutes (2-3 minutes) before adding the ice cream for a crispier experience!

Peanut Butter Chocolate Chip Ice Cream Waffle Cups

Serves 6 servings


Ingredients

Method

  1. Preheat the oven at 350F.

  2. Microwave your waffles for 30 seconds or let it sit at room temperature for a soft texture.

  3. In a bowl add the egg whites, cinnamon, monk fruit and vanilla. Mix well.

  4. Soak each waffle into the egg mix and place them carefully in a silicone muffin cup.

  5. Bake for 12-15 minutes.

  6. Let it cool down.

  7. Scoop 1/4 cup of ice cream into each waffle cup and top with chocolate and strawberries.

  8. Freeze for a couple of hours and enjoy!
