On instagram I'm pretty much known by my cup and my no bake recipes, and as much as I love those recipes for multiple reasons, including easy and great for the freezer the holiday season is upon us and it calls for all the baking!
Specially this crazy year that must remain safe and sound right at home baking as a stress reliever and spending time with people you love is always a great idea and on this occasion I'm bringing to you these cheerful scones.

In this occasion peppermint scones with a cozy latte is just the perfect pair for a chilly day, to stay inside and watch movies... sounds amazing! And I can't wait to do these with these delicious and nourishing scones.

The ingredients on this recipe are extremely easy and simple, keeping it low carb and paleo for you be able to share with everyone and still enjoy a delicious snack or treat during this holiday season.
Simple, Peppermint Scones:
Almond flour
Coconut flour
Granulated monk fruit ("PURELYHL" for discount)
Egg
Keto Coffee Creamer (can substitute for ghee or coconut oil)
Chocolate Bark (I used peppermint)
Only SIX key ingredients! And as you can see they are all a great staple, great to keep in hand to create more recipes... these have been for me at least! Because they are a great replacer for those refined ingredients such as wheat flour, sugar or oils.
It's easy to create better recipes by using better ingredients, no need to sacrifice the taste and also, super uncomplicated, you'll see next on the method section.

Preheat the oven at 350F.
In a large bowl add all the dry ingredients and mix well.
Add the water, ghee and egg and mix again.
Pour the mix into a circular baking dish.
Top with crushed chocolate.
Bake for 25 minutes.
Let it cool down and enjoy!
In this recipe I decided to top it with some pomegranate seeds to give it a christmasy color and with a drizzle of a combination of whey protein with almond milk... you know, to make it look prettier!
Results
These scones are crumbly, soft and have a great flavor of peppermint, plus the amazing crunch of the chocolate on top. I really liked dipping into coffee or almond milk... so cozy for an evening night in!
Loaded with those healthy fats from ghee, eggs and almond flour, these bad boys are a great low carb version and a great way to keep those glucose levels nice and happy while enjoying every single bite!

Peppermint Chocolate Scones

Ingredients
Base
1/2 cup of almond flour
3/4 cup of coconut flour
1/3 cup of granulated monk fruit ("PURELYHL" for discount)
1 egg
6 tbsp of Peppermint Keto Coffee Creamer (can substitute for ghee or coconut oil)
2 pieces of chocolate Bark (56g) (I used peppermint)
Method
