Pizza Grilled Cheese with Tomato Soup

Serves 1


Ingredients

  • 2 slices of low carb bread

  • 6-8 slices of organic turkey pepperoni

  • 1 piece of the laughing cow cheese

  • 2 slices of mozzarella cheese

  • 1 tsp of ghee

  • 2 cups of Tomato Basil Soup (used I Eat My Greens)

Toppings (optional)

  • Red pepper flakes

  • Fresh Basil

  • Parmesan Cheese


Instructions

  1. Spread the light cream cheese over one piece of bread, add the slices of pepperoni and mozzarella cheese top with the other piece of bread.

  2. Transfer into a slightly greased skillet with ghee and toast each side of the sandwich for 1-2 minutes in low heat.

  3. Pour the soup into a microwave dish and cook for 1:30-2:00 minutes.

  4. Top with parmesan cheese, red pepper flakes and fresh basil.

  5. Enjoy with grilled cheese sandwich!
