Protein Berry Pudding Pies (4 of July Dessert)

July is all about berries, fireworks, summer vacations and of course a good festive recipe for the 4 of July couldn't be missed. This recipe is great to celebrate freedom and just the fact that we are alive and able to enjoy the pleasures of life... these pies are part of it!


For this recipe I’m using amazing and fun ingredients such as greek yogurt, keto friendly vanilla and banana pudding mix from Simply Delish, greek yogurt, coconut butter and of course, some berries. A great protein snack to fuel your body. Delicious, low carb friendly and gluten free berry pudding pie to celebrate this 4 of July!

Just in time for the 4 of July celebrations, these pies will be fireworks to your tastebuds! I also wanted to include a twist, a healthy and still delicious twist by just adding some Simply Delish Keto Vanilla Instant Pudding and some greek yogurt that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!


Key Ingredients:

Some greek yogurt along with some instant pudding... guys this is perfect for to add volume without adding extra calories to your recipes. I have been also obsessed with Simply Delish, the ingredients are simple, low carb and gluten free... plus the taste is just delicious.



A creamy low carb base, with all the colors of the flag using simple ingredients and berries! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. While keeping your body strong and fueled with all the amino acids of antioxidants from the protein blend we are using.


The base of these Protein Berry Pudding Pies:

The base is made with simple ingredients; greek yogurt for those probiotics, some Simply Delish Keto Vanilla & Banana Instant Pudding and stevia, blueberries and for the topping more berries and some coconut butter. This combination keep things creamy, low carb, gluten free and flavorful.

The end result

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, the vanilla pudding mix with the berries and blueberry banana combination along with the coconut butter here makes it a combo that it's just so irresistible, plus it's so easy to make!


Melts in your mouth! These are soft, creamy and dreamy! This is just a perfect dessert, post workout or snack that takes just a few steps and it's very easy to make.



You might want to save this recipe because a second recipe might be needed here! I shared some of the recipe with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Protein Berry Pudding Pies

Serves 12 servings


Ingredients

Blueberry Pie Base

  • 2 cups of greek yogurt

  • 5 packs of stevia

  • 1 cup of blueberries (heated in the microwave 45 seconds)

  • 1 pack of Simply Delish Keto Banana Instant Pudding Mix (PURELYHL for discount)

Vanilla Pudding Stars

  • 1 cup of greek yogurt

  • 2 tbsp of Simply Delish Keto Vanilla Instant Pudding Mix

  • 3/4 cup of almond milk

Toppings

  • 1/2 cup of strawberries

  • 1/4 cup of blueberries

  • 1/4 cup of melted coconut butter


Method

  1. Mix all the ingredients for the star mix and pour into small silicone star molds and freeze for a couple of minutes.

  2. Mix all the ingredients for the blueberry pie.

  3. Divide the pie mix into 12 silicone muffin cups.

  4. Top with the rest of the toppings and drizzle the melted coconut butter.

  5. Refrigerate for a couple of hours of minutes and enjoy!
