Salmon Ginger Dumplings with Pineapple Aminos Sauce

Serves 10


Ingredients

Pineapple Sauce:  

  • 1/2 cup Nutiva Coconut Aminos

  • 3 tbsp pineapple juice

  • 3 tsp rice vinegar

  • 2 tsp sriracha

  • 1 tbsp dried green onions

  • 1/2 tbsp red pepper flakes

Dumplings:  

  • 2 sock-eye salmon fillets

  • 2 tsp ground ginger

  • 2 tbsp Nutiva Coconut Aminos

  • 1/4 tsp sea salt

  • 1 pack monk fruit sweetener

  • 1/8 tsp black pepper

  • 1 tsp garlic powder

  • 1 large whisked egg

  • 10 gluten-free dumpling wrappers

Garnish:  

  • 2 tbsp dried green onions

  • 2 tsp sriracha


Instructions

  1. Mix all sauce ingredients in a bowl and set aside.

  2. Finely chop the salmon, combine with ginger, coconut aminos, salt, pepper, monk fruit, and garlic in a bowl.

  3. Cook salmon mixture in a skillet with green onions until fully cooked, about 6-8 minutes over medium-high heat.

  4. Brush dumpling wrappers’ edges with egg, place a small spoon of salmon filling in the center, and fold to seal. Repeat for all dumplings.

  5. Air fry the dumplings at 380°F for 6 minutes, sprayed lightly with oil.

  6. Serve hot with pineapple aminos sauce and garnishes.
