Rainbow Matcha Rice Pudding

Ingredients
2 cups of Minute Basmati Rice Cups
1 tbsp of ceremonial matcha
1 cup of coconut milk
1/4 cup of coconut condensed milk
3 tsp of Mexican vanilla extract
2 tbsp of unsweetened shredded coconut
Instructions
Remove the film from each Minute Rice Cup and microwave for 90 seconds (one cup is microwaved for 60 seconds).
In a mixing bowl, combine the coconut milk with matcha, whisking until smooth. A milk frother works wonders for this step!
Add the heated rice into the bowl with the coconut matcha mix, as well as the coconut condensed milk, vanilla extract, and shredded coconut. Microwave this mixture for 5 minutes to heat through.
After cooking, let the mixture cool down slightly. Divide the rice pudding into two cups.
Top generously with coconut whipped cream, sprinkle dye-free sprinkles, and add sliced strawberries for a pop of color and taste.
