As I mentioned earlier, some Knorr Chicken Bouillon, chile poblanos, cilantro and cream cheese and of course, salmon which is super versatile and cooked with just simple ingredients, perfect to pair your lunch or dinner recipes, this one for sure!


You can use your favorite, type of rice here. For this recipe I simply used Jasmine rice and cooked it on my Instant Pot, I made a whole batch and saved the rest to make some rice pudding.


As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste. You can also pair this with your favorite protein; tofu, eggs, chicken, pork, or beef... or alone!

Salmon with Poblano Pepper Creamy Rice

Serves 4


Ingredients

Salmon

  • 4 cups of cooked rice

  • 1 1/2 cup of unsweetened almond milk

  • 4 tbsp of light cream cheese

  • 2 tbsp of Knorr Chicken Bouillon

  • 1/2 tsp of garlic powder

  • 1/4 cup of chopped fresh cilantro

  • 1 cup of chopped roasted poblano peppers

Salmon

  • 4 pieces of salmon

  • 1 tbsp Knorr Chicken Bouillon

  • 1 lime


Garnish

  • Chopped Cilantro

  • Organic Canned Corn

  • Chopped Poblano Peppers

  • Red Pepper Flakes

  • Cotija Cheese 


Instructions

  1. Preheat the oven at 350F.

  2. Place the salmon in a baking tray, season with lime, and @knorr Granulated Bouillon

  3. Bake for 18 minutes.

  4. In a blender blend almond milk, cream cheese, poblano peppers, garlic powder and Knorr Granulated Bouillon.

  5. Pour the mix over rice and mix in with chopped cilantro and poblano peppers.

  6. Serve the rice with salmon and top with garnish; cilantro, corn and cotija cheese.
