Mexican Migas (Scrambled Eggs)

Serves 4


Ingredients

  • 8 corn tortillas

  • 6 whole eggs

  • 1/4 cup of finely chopped onion

  • 1/2 tsp of garlic

  • 1/8 tsp of black pepper

  • 1/4 tsp of sea salt

  • 1/3 cup of tomato sauce

Serving

  • 1/4 cup of plain greek yogurt

  • Chopped Cilantro

  • Chopped Red Onion


Instructions

  1. Cut the tortillas into pieces of 0.5 x 0.5 inch.

  2. Start cooking the onion in a non-stick skillet in medium heat.

  3. Add the sliced corn tortillas and let them toast for 1:30 minutes.

  4. Mix the eggs with seasonings.

  5. Pour the eggs over the tortillas.

  6. Let it cook for 2 minutes then fold carefully and let it cook for other 3 minutes approximately. Slice it half.

  7. Serve the migas with optional toppings.

  8. Enjoy!
