Serves 8 large cookies


Ingredients

  • 1 1/4 cups gluten-free flour

  • 1/3 cup of gluten-free vanilla cake mix

  • 2 scoops of Equip grass-fed vanilla whey protein

  • 1/3 cup of crushed gluten-free pretzels

  • 1/3 cup of coconut vanilla grain-free granola

  • 1/4 tsp of sea salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 2/3 cup granulated monk fruit sweetener

  • 2/3 cup ghee (softened)

  • 2 large organic eggs

  • 1 tablespoon vanilla extract

  • 2/3 white chocolate bar (I used Tony's)


Instructions

  • Step 1: Preheat the Oven. Begin by preheating your oven to 350°F (175°C) to ensure an even bake for your cookies.

  • Step 2: Mix Dry Ingredients In a large mixing bowl, combine the gluten-free flour, cake mix, sea salt, baking powder, baking soda, crushed pretzels, granola, and monk fruit sweetener. Stir until evenly mixed to create your dry base.

  • Step 3: Add Wet Ingredients Next, add the softened ghee, organic eggs, and vanilla extract to the dry mixture. Mix thoroughly until all ingredients are well combined and form a dough.

  • Step 4: Chop and Add White Chocolate Chop your white chocolate bar into small pieces, then gently fold it into the cookie dough, ensuring every bite gets a taste of that creamy goodness.

  • Step 5: Shape and Bake Using your hands, shape the dough into 10 equal-sized cookies and place them on a lined baking sheet, leaving space between each cookie.
