Serves 10 easter eggs
Ingredients
1/2 cup of oat flour
1/3 cup of granulated monk fruit
1/2 cup of coconut yogurt
3 scoops of Terra Origin Healthy Greens Kiwi Strawberry
1 cup of organic rice crisps
1 cup of white chocolate chips
1 tbsp of coconut oil
Sea salt flakes
Freeze-dried strawberries
Optional: dye-free sprinkles
Instructions
In a large bowl, mix the ingredients for the filling and set aside. Ensure all ingredients are well combined for a delightful flavor in every bite.
Melt the white chocolate chips with the coconut oil using the Bain Marie method in the microwave. This gentle melting technique ensures that your chocolate remains smooth and creamy.
Sprinkle sea salt, freeze-dried strawberries, and optional dye-free sprinkles at the bottom of the Easter egg silicone molds. This adds a decorative touch and a burst of flavor in each egg.
Spread a layer of the melted chocolate on the bottom of the silicone egg molds, then refrigerate for a few minutes until the chocolate solidifies.
Once the chocolate is firm, carefully stuff each egg with the filling mixture, ensuring an even distribution. Top off with the remaining melted chocolate.
Return the filled molds to the refrigerator for a few more minutes to allow the tops to set completely.
