Tomato Goat Cheese Tart (Low Carb & Gluten Free)

Does anyone else feels extra fancy whenever you eat goat cheese? I know I do! And it's probably my favorite cheese besides mozzarella, which is also included in this cheesy tart... CHEESE GOALS!


I needed to step up my savory game in my blog and a goat cheese tart with a hint of an Italian inspiration was the perfect way to do it. A few tastebuds will agree, mine and moms included.



For the base of this goat cheese tart I decided to keep it very simple and I used a paleo burrito sized tortilla from Siete Foods, love their products and I really find their burrito tortillas a great pie crust.



For the filling, well, of course goat cheese! But I also worked with some other ingredients that were on my freezer and fridge that could work perfectly with the vibe I was going with on this recipe; sausage links, tomatoes, mushrooms and spinach... Ah yes! And more cheese.



The ingredients of this Tomato Goat Cheese Tart:

  • Paleo burrito sized tortilla (I used Siete Foods)

  • Goat cheese

  • Eggs

  • Breakfast sausages links

  • Tomatoes

  • Mozzarella cheese

  • Mushrooms

  • Spinach

  • Garlic powder

  • Dried parsley

  • Sea salt

  • Black pepper



I just placed the burrito sized tortilla in a circular baking dish with some waxed paper on the bottom, that's a great way to make sure it doesn't stick, plus it's easier to take and transfer it after it's baked and cooled.



The filling was also extremely easy! I just blended they ingredients; tomato, goat cheese, seasonings and eggs. Pour it over the crust and topped with the sliced mushrooms, spinach for a green touch and mozzarella cheese.



How to make this EASY tart!

  1. Preheat the oven at 350F.

  2. Place the tortilla on a circular baking dish, greased or covered with waxed paper.

  3. In a food processor add the tomato and pulse a few times.

  4. Add goat cheese, seasonings and eggs. Pulse again until you get a smooth mix.

  5. Pour over the tortilla crust.

  6. Top with shredded mozzarella, sausages, mushrooms and spinach.

  7. Bake for 40 minutes.

  8. Let it cool, cut into 8 pieces and enjoy!



The results

This recipe serves 8 pieces what will be great for lunch, brunch, breakfast, dinner and even snack since it's nutrient and has enough protein! This tart is creamy thanks to the goat cheese and the tomato really blend very well with the flavor creating a nice aroma too.



The crust doesn't break when you are serving it, although if you want it to be extra crispy put on some ghee, butter or coconut oil on the baking dish before putting your tortilla over the waxed paper (or you can also skip the waxed paper).



The toppings just add the perfect combination of texture between each bite; crust, creamy filling and the mushrooms with the sausages. Another two key ingredients for the amazing smell of this recipe; spinach and sausages.


Gluten free and keto? No problem!

It's all about adjusting and finding the right recipes and ingredients so if you are on your gluten free or keto/low carb journey you are going to love this simple and amazing dinner.



Each piece of this tart has a total of 7.5 grams of carbs and 10.3 grams of protein, so it's a great snack, to pair your veggies from lunch, breakfast or dinner while getting that calcium, vitamin A, probiotics, phosphorus among more nutrients from goat cheese.

  • 3 breakfast sausages links

  • 2 chopped tomatoes

  • 1/2 cup (60g) of shredded mozzarella cheese

  • 1/2 cup of sliced mushrooms

  • 1/4 cup of chopped spinach

  • 1/4 tsp of garlic powder

  • 1/2 tbsp of dried parsley

  • 1 tsp of sea salt

  • 1/2 tsp of black pepper

Method

  1. Preheat the oven at 350F.
