Such a great combination of flavors and textures in this creamy and soft vanilla pudding berries & cookie pie is just another level; low carb, gluten free and using better for you ingredients.


For this recipe I’m using amazing and fun ingredients such as greek yogurt, keto friendly vanilla pudding mix from Simply Delish, greek yogurt, keto friendly cookies and of course, some veggies. A great protein snack to fuel your body. Delicious, low carb friendly and gluten free vanilla pudding cookie pie!

We are showing some love to all my berries and cookie fans... a classic we all love! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Simply Delish Keto Vanilla Instant Pudding and some greek yogurt that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!

Adding some gluten free and low carb cookies from my faves, Super Fat for the toppings of this creamy pudding pie. I have been also obsessed with Perfect Keto products!, the ingredients are simple, low carb and gluten free... plus the taste is just delicious.

Vanilla Pudding Berries & Cookie Pie

Serves 4 servings


Ingredients

Base

  • 1/2 cup of coconut flour

  • 6 packs of stevia

  • 1/3 cup of egg whites

  • 1/3 cup of water

Vanilla Pudding Mix

  • 1 cup of greek yogurt

  • 1/2 pck of Simply Delish Keto Vanilla Instant Pudding Mix (PURELYHL for discount)

  • 1/2 cup of almond milk

Toppings


Method

  1. Preheat the oven at 350F.

  2. Mix all the ingredients for the base.

  3. Spread the mix in a silicone small baking dish.

  4. Bake for 18 minutes.

  5. Mix all the ingredients for the vanilla pudding mix.

  6. Spread on top of the base already baked base.

  7. Add your toppings and cut into 4 pieces.

  8. Enjoy!
