Well, since January is my birthday month I am going all in with the sprinkles so don't mind the unicorn mood and all the birthday emojis... these birthday cookies are here to rock on the first month of the year!

Vegan Birthday Cake Protein Cookies

Method

  1. Preheat the oven at 325F.

  2. Mix all the dry ingredients in a large bowl.

  3. Add the nut butter, coffee creamer and mix well.

  4. Scoop the dough with a cookie scooper, it made 28 for me.

  5. Bake for 9-11 minutes.

  6. Enjoy!
