Nobody will tell these are vegan! These patties have a lot of goodness and nutrient dense ingredients; tahini in pesto flavor, broccoli, ground flaxseed and I'm also using a LesserEvil PeaNOTS vegan little bites in ranch; simply LIT!

Okay, this took me legit the most epic vegan patty, even a veggie hater will fall for this! The combination of flavors and textures is just out of this world; with the tahini and some ranch protein nuggets for that crisp and extra flavor.
We are using the basic ingredients for this casserole, or bowl recipe; all the flavor! These are perfect for lunch, breakfast or dinner. Just pair them with your favorite sauce, dip... even some buns or eggs!
The beauty of this recipe is that it's good on its own or as a companion of your favorite meal, the ideas are simply endless and delicious.

Any else is fan of broccoli? Well this is a perfect veggie that works so well for the patties, no need to cook before baking it all together with the rest of the ingredients; provides us some vitamin C, fiber and antioxidants.
Broccoli is also a source of a compound called glucosinolates; that has been proved to have anticancer properties! YAY for broccoli!
Let's not forget about one key ingredient, tahini! Made from sesame seeds, little power houses that adds some healthy fats, zinc and some B vitamins. Also typically used for seed cycling.

Vegan Tahini Pesto Broccoli Patties

Serves 7 servings
Ingredients
1 bag of LesserEvil PeaNOTS in Vegan Ranch
1/4 cup of ground flaxseed
1 tsp of baking powder
1/2 tsp of sea salt
1/4 tsp of black pepper
1 tbsp of dried parsley
2 cups of broccoli
1 cup of tahini
Method
Preheat the oven at 350F.
Process the broccoli until you get it very fine, and transfer to a deep bowl.
Process the PeaNOTS till you get a flour consistency and mix with the broccoli and the rest of the ingredients in the same bowl as the broccoli.
Create 7 patties and bake for 25-30.
