And of course, Opal apples grown in Washington, non-GMO plus they are the perfect topping for this cheesecake thanks to the sweet and tangy flavor they have.

Apple Ginger Frosted Cheesecake

Serves 1-3 servings


Ingredients

Cheesecake

  • 1 cup of organic kefir

  • 3/4 cup of sugar cookie gluten-free cereal

  • 2 whole organic eggs

  • 1 tsp of vanilla extract

  • 1/2 cup of granulated monk fruit

Toppings

  • 1 chopped Opal apple

  • 3 tbsp of sugar-free maple syrup

  • 2 tsp of cinnamon

Sugar-Free Glaze

  • 1/2 cup of powdered monk fruit

  • 2 tbsp of unsweetened almond milk

  • 1/4 cup of cranberries


Instructions

  1. Preheat the oven at 350F.

  2. Blend the ingredients for the cheesecake.

  3. Pour over a baking dish and bake for 30-35 minutes.

  4. Let it cool down.

  5. In a skillet cook apples with cinnamon and maple syrup, cook for 4-6 minutes until softened.

  6. Mix the ingredients for the glaze, except for the cranberries.

  7. Top the baked and cooled cheesecake with apples, cranberries and glaze.

  8. Enjoy!
