Serves 2


Ingredients:  

  • 1 cup Fiber Gourmet Flour Blend

  • ¼ cup granulated monk fruit sweetener

  • 1 teaspoon baking powder

  • 1 large egg

  • ¼ cup milk (dairy or non-dairy)

  • ½ cup Greek yogurt

  • 1 tablespoon vanilla bean paste

  • 1 teaspoon vanilla extract

  • ⅛ teaspoon almond extract

  • 2-3 tablespoons dye-free sprinkles

For the Frosting:  

  • 1 cup Greek yogurt

  • 1 teaspoon vanilla extract

  • 1 cup powdered monk fruit sweetener

  • 1 tablespoon strawberry powder

  • ⅓ cup dye-free sprinkles for topping


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the flour, monk fruit sweetener, and baking powder.

  3. Add the egg, milk, Greek yogurt, vanilla bean paste, vanilla extract, and almond extract. Stir until smooth.

  4. Pour the batter into a greased small baking dish.

  5. Bake for 18-22 minutes or until golden brown and a toothpick inserted comes out clean.

  6. While cooling, mix the frosting ingredients in a bowl until smooth.
