Blueberry Banana Crumble Bars

Serves 9
Ingredients
1 package of Dilettoso Bella Berry Gluten-Free Amore Mix
3/4 cup coconut oil
3/4 cup unsweetened almond milk
1 large egg
Blueberry Filling:
1 cup powdered monk fruit
1 cup blueberries
1 sliced banana
2 tsp vanilla extract
1 tsp lemon zest
Toppings:
Melted white chocolate (for decoration)
3 tbsp brown granulated monk fruit
Instructions
Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
Combine the Dilettoso mix, coconut oil, almond milk, and egg in a bowl; mix well.
Pour 3/4 of the batter into the greased baking pan.
In another bowl, mix the blueberry filling ingredients. Microwave for 2 minutes, then mash the blueberries.
Spread the blueberry mixture over the batter, layer with sliced bananas, and sprinkle brown monk fruit. Crumble the remaining batter over the top.
Bake for 28-30 minutes until golden brown. Drizzle with melted white chocolate for decoration.
