Serves 5 large cookies


Ingredients:

  • 1 1/4 cups gluten-free all-purpose flour

  • 2/3 cup Artisana Coconut Butter Granola Shop here

  • 2 tbsp cornstarch

  • 1/4 tsp salt

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 cup brown monk fruit sweetener

  • 1/2 cup granulated monk fruit sweetener

  • 1 tbsp vanilla extract

  • 2/3 cup Artisana Coconut Oil (softened)

  • 2 large eggs

  • 2 tbsp unsweetened almond milk

Filling

  • 3/4 cup of dairy-free cream cheese (room temperature)

  • 1/3 cup of blueberries

  • 1/4 cup of granulated monk fruit


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. Mix the gluten-free flour, coconut granola, monk fruit sweeteners, cornstarch, baking soda, and baking powder in a large bowl.

  3. Incorporate the softened coconut oil, eggs, vanilla extract, and almond milk; stir until the batter is smooth.

  4. Form five large cookie shapes on a parchment-lined baking sheet, creating a small well in the center of each.

  5. Bake for 13-14 minutes until edges are golden and centers are chewy.

  6. Meanwhile, blend the cream cheese with dried blueberries and monk fruit for the filling.

  7. When cookies are baked and slightly cooled, press the center with a spoon and fill with the blueberry cream cheese mixture.
