Breakfast Chorizo & Avocado Torta

Inspired by my one of my favorite Mexican foods. A delicious easy to make glute-free, yummier and healthier version of a classic Mexican torta, AKA Mexican sandwich. Such a comfort food and something you'll find all around Mexico as part of a classic breakfast or lunch dish.


There's something about cheese and chorizo together that it just so special and delicious, I decided to incorporate them in this gluten-free torta recipe. This will make a great healthy and fun recipe for you to make for your family, picky eaters? Give this a try!



About this Breakfast Chorizo & Avocado Torta:

This is extremely easy to make and extremely flavorful! The ingredients are simple and short, and the process of making these is just as minimal and easy, you'll be surprised... your guests and their tastebuds! This recipe is perfect no matter the occasion but I wanted to add a little fun twist by stuffing adding some chorizo and avocado to your regular egg sandwich... inspired from one of my favorite Mexican breakfast dishes.


Using also some Canyon Bakehouse Honey Whole Grain English Muffin and a touch of Pederson's Farms no sugar added chorizo, this recipe is made with all high in protein, and gluten-free ingredients that will please your tastebuds in every bite.

As I mentioned earlier, I used Canyon Bakehouse Honey Whole Grain English Muffin which are super versatile and fluffy, the perfect base for this street food torta inspiration by adding some Pederson's Farms no sugar added chorizo and some avocado.


And for this recipe you only need a skillet to cook the eggs! Cheesy, and creamy filling, you are going to simply love them, plus these are fail proof, made with simple ingredients.

This are easy to make, comforting, flavorful and so addicting! These turned out very flavorful, cheesy, and with that kick of chorizo that makes a huge difference. A great addition of the beans and avocado really creates that amazing street food torta effect I love.


Cheesy, spicy and with that amazing touch of beans on the english muffins... perfection!

For a tasty and nice twist of a sandwich, this was such a comfort food. The cheese and chorizo here is just the perfect combination that gets completed by the avocado and eggs here.



Not boring or complicated! This are a great lunch or snack for kids and grown ups. Pro tip: Prepare these for meal prep, wrap them and freeze them! You can air fry them for later... although these are just so easy to make that you can make them as you go.

Breakfast Chorizo & Avocado Torta

Serves 1 serving


Ingredients

  • 1 Canyon Bakehouse Honey Whole Grain English Muffin

  • 1/4 cup of refried beans

  • 2 organic eggs (1/2 tsp of taco seasoning, salt and pepper for the eggs)

  • 2 tbsp of cooked chorizo

  • 1 slice of manchego cheese

  • 1/4 sliced avocado

  • 1 slice of ham

Method.

  1. Whisk the eggs with seasonings. Cook the eggs in a skillet.

  2. Spread the beans over each slice of bread.

  3. Add the rest of the ingredients and top the other half of the English muffin.

  4. Enjoy!
