Serves 4-6


Ingredients:  

  • 1 1/4 cups plain coconut yogurt

  • 2 tbsp chia seeds

  • 2 tbsp granulated monk fruit

  • 1 pack (1 tbsp) Simply Dessert Gelatin Powder

  • 1/4 cup cold water

  • 1/4 cup hot water

  • Fresh berries: strawberries, raspberries, blackberries, blueberries (for topping)


Instructions

  1. Mix gelatin with cold water, then dissolve with hot water.

  2. Stir yogurt, monk fruit, and chia seeds in a bowl.

  3. Add gelatin, mix well, pour into molds.

  4. Chill 2 hours.

  5. Top with berries, enjoy!
