Chilaquiles Frittata Skillet (Gluten Free & Low Carb)

Inspired by my beloved Mexican cuisine, and my all time favorite Mexican breakfast recipe I introduce you to this simple and delicious Chilaquiles Frittata Skillet that will delight your taste buds in such a convenient and easy way!


The ingredients for this recipe are super basic; eggs, cheese, green salsa and corn tortillas, of course. And even though we are using regular (non-GMO) corn tortillas this is still a low carb recipe, each slice has only 7.5 grams of total carbs. A pretty decent amount, and still indulgent!



Chilaquiles are such a classic when it comes to breakfast in Mexico, every place offer them in so many variations of sauces; green, red, mole, chipotle, even chile pasilla... the ideas are endless and all delicious! In this occasion we are sticking to a classic and my personal favorite. Salsa verde.



I used Siete Food Enchilada Sauce but you are free to use your favorite one. Green salsa is basically just made from tomatillos, cilantro, green onion and white vinegar. I actually have a recipe on the blog! One of the first ever recipes I posted, click here for my green salsa recipe.



The way of making this simple frittata is another amazing thing about the recipe. Is basically just mix, pour and bake. That's it! The full instructions will be below along with the nutritional information.

Another thing about Mexican food is that you can always take them to the next level and party up any food! Chilaquiles, besides being offered in different types of salsas you can add different toppings, in this case I used my favorite and classic. EGGS.



Ways to top or have this Chilaquiles Frittata Skillet:

  • Topped with eggs

  • Shredded chicken

  • Crema or sour cream

  • Beef

  • Along with beans

  • Pico de gallo

  • Sausages or Chorizo

Hard to resist, right? Anyways, I enjoyed this recipe as breakfast and dinner. But it can be enjoyed at any time of the day and great to make to your loved ones, specially Mexican food lovers!



Easiest Chilaquiles ever!

  1. Preheat the oven at 350F.

  2. In a bow beat the eggs and add seasonings.

  3. Add the sauce.

  4. Pour the egg mix into an iron skillet greased or with waxed paper.

  5. Bake for 30 minutes.

  6. Cut into 8 equal squares.

  7. Top with fresh cilantro.

  8. ENJOY!


And yet, once it's cooled down you can totally save this in some glass containers or freeze for later. This was gone in just a few minutes but definitely going to make a second batch since everyone loved it!

Chilaquiles Frittata Skillet

Serves 8


Ingredients

  • 4 corn tortillas cut into squares (I used blue corn tortillas)

  • 2/3 cup of shredded cheese

  • 4 eggs

  • 1/2 cup of Green Enchilada Sauce (I used Siete Foods)

  • 1 tbsp of chopped cilantro

  • 1 tsp of sea salt

  • 1/2 tsp of dried garlic

  • 1/8 tsp of black pepper


Method

  1. Preheat the oven at 350F.

  2. In a bow beat the eggs and add seasonings.

  3. Add the sauce.

  4. Pour the egg mix into an iron skillet greased or with waxed paper.
