For this recipe I kept is very simple but I also wanted to add a twist of some holiday vibes such as cinnamon and caramel chocolate a nice level up that will be a great recipe to bake no matter the season. We are keeping it gluten free and low carb as well!

In this recipe we are using simple ingredients and low carb. We are using keto friendly bread mix to make the easiest cinnamon rolls ever, with a delicious filling of caramel dark chocolate pieces and a creamy topping made from free yogurt and chocolate grass-fed whey protein.

Okay, so as I mentioned earlier I'm using Beyond Good Caramel Chocolate that it is a chocolate from single origin from Madagascar 73% dark, the perfect contrast of sweet and dark notes I love in a chocolate.. But I'm also using keto bread mix to make things easier, in this case it's from Scotty's, a brand that I recently got to try and actually find very uselful and versatile!

Chocolate Caramel Cinnamon Rolls

Serves 9 servings


Ingredients

Base

  • 1 pack of Scotty's Keto Bread Mix (or your favorite bread mix)

  • 1 tsp of manuka honey

  • 1 + 1/4 cup of warm water

  • 1 pack on instant yeast

  • 2 tbsp of coconut oil or MCT oil

  • 1/4 cup of alullose

  • 2 tbsp of cacao powder

  • 1 tsp of cinnamon

Filling

Topping


Method

  1. Dissolve the instant yeast in the war water with honey and let it sit for a couple of minutes while you mix the dry ingredients.

  2. In a bowl mix the bread mix, cacao powder, cinnamon and alullose.

  3. Add the oil and water and mix well. Cover the bowl and let it sit for at least 1 hour.

  4. Preheat the oven at 350F.

  5. Roll the dough into a rectangle (PRO TIP: use plastic kitchen wrapping paper and a kitchen roller).

  6. Add the stuffing and roll from and cut into 9 pieces. You can place them in a muffin cup too and bake from there.

  7. Bake for 20 minutes.

  8. For the topping: in a bowl mix the greek yogurt, whey protein and alullose.

  9. Once the rolls have cooled down top with the greek yogurt mix and finally add the leftover chocolate.

  10. Enjoy!
