Peanut Butter Butternut Squash Protein Muffins

Serves 12 muffins


Ingredients

  • 2 (200g) cups of gluten-free chocolate chip pancake mix

  • 2 scoops (64g) of peanut butter whey protein powder

  • 1 tsp of cinnamon

  • 1 tsp of baking powder

  • 1/2 of RxSugar alullose (MARIA20 for discount)

  • 2 whole eggs

  • 1 tsp of vanilla extract

  • 1/2 cup of butternut squash

  • 1/4 cup of water

  • 1/4 cup of peanut butter

Toppings (optional)

  • Whipping Cream

  • Crushed Pumpkin Spice Cereal

Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients.

  3. Incorporate the peanut butter, butternut squash, water, vanilla extract, eggs, and mix well.

  4. Transfer to 12 silicone baking molds.

  5. Bake for 20 minutes and let it coo, add the toppings and enjoy!
