Serves 2 (7 pancakes)


Ingredients

  • 1 cup of gluten-free flour

  • 1/2 tsp of baking powder

  • 1/2 tsp of baking soda

  • 1/2 tsp of baking kosher salt

  • 1 whole egg

  • 1 tsp of butter flavor drops

  • 1 tsp of vanilla extract

  • 1 tsp of cinnamon

  • 1 tsp of ginger

  • Dash of clove and cardamom

  • 1 cup of low-fat milk

  • 2 tbsp of apple vinegar

Toppings

  • 2 tbsp of Elavi Chocolate Fudge Cashew Butter (PURELYHEALTHYLIVINGBLOG for discount)

  • Sugar-Free Maple Syrup

  • 1/4 cup of mini vegan maple marshmallows

Instructions

  1. Mix the dry ingredients for the pancakes, then incorporate the rest of the ingredients, stir without over mixing.

  2. Cook on a pancake griddle for 3-4 minutes or on a skillet for 1-2 minutes per side in medium low heat.
