Inspired by my favorite Spanish restaurant. A delicious easy to make glute-free, yummier and healthier version of these, no fried, instead baked and still so crunchy! Easy to make, baked and just a crowd pleaser, you really need to make this recipe, great for meal prep as well!


There's something about cheese and chorizo together that it just so special and delicious, I decided to incorporate them in this gluten-free croquette recipe! This will make a great healthy and fun recipe for you to make for your family, picky eaters? Give this a try!

This is extremely easy to make and extremely flavorful! The ingredients are simple and short, and the process of making these is just as minimal and easy, you'll be surprised... your guests and their tastebuds! This recipe is perfect no matter the occasion but I wanted to add a little fun twist by stuffing adding some chorizo... inspired from one of my favorite tapas restaurant.


Using also some Milton's Craft Bakers Olive Oil & Sea Salt Crackers and a touch of Pederson's Farms no sugar added chorizo, this recipe is made with all high in protein, and gluten-free ingredients that will please your tastebuds in every bite.



What's in these Chorizo & Cheese Gluten-Free Croquettes?

As I mentioned earlier, I used Milton's Craft Bakers Olive Oil & Sea Salt Crackers which are super versatile and crispy, the perfect base for these croquettes with an Spanish inspiration by adding some Pederson's Farms no sugar added chorizo.


And for this recipe you only need your food processor or a good blender! Crispy, and creamy filling, you are going to simply love them, plus these are fail proof, made with simple ingredients and no need fry them.

The end result

This are easy to make, comforting, flavorful and so addicting! These turned out very fluffy, cheesy, and with that kick of chorizo that makes a huge difference. A great addition of substitute of ham as traditional croquettes suggest.

You can pair these with your favorite protein or as a tapa along with some wine, super delicious and perfect for gatherings. You can pair these with a sauce, I used buffalo ranch and it turned out amazing!

Chorizo & Cheese Gluten-Free Croquettes

Serves 6 servings


Ingredients

  • 1 pack of Milton's Craft Bakers Olive Oil & Sea Salt Crackers

  • 1 whole egg

  • 3/4 cup of shredded cheese

  • 1/2 cup of cooked Pederson's Farms no sugar added chorizo

  • 2 (350g) peeled and cooked potatoes

  • 1 tsp of garlic

  • 1 tsp of pink salt

  • 1/4 tsp of black pepper

  • 2 tbsp of dried parsley

  • 1 tbsp of dried onion flakes

Method.

  1. Preheat the oven at 350F.

  2. Blend or process the crackers until you get a flour consistency.

  3. Add the rest of the ingredients and process until fully incorporated.

  4. Scoop about 1/4 cup of the dough and create your croquettes.

  5. Place them in a baking dish and bake for 20-22 minutes, or air fry for 18 minutes at 355F.

  6. Serve and enjoy!
