Serves 8 pancakes
Ingredients
Pancakes:
1 cup gluten-free all-purpose flour
1/2 cup oat flour
1 tsp baking soda
1 tsp baking powder
3/4 cup unsweetened almond milk
1/2 cup whole milk Greek yogurt
2 organic eggs
1 tsp vanilla extract
Or favorite pancake mix prepared as instructed
Cinnamon Swirl:
4 tsp cinnamon
1/4 cup granulated monk fruit
1 tsp vanilla extract
Icing:
1/3 cup powdered monk fruit
1/2 cup cream cheese (or plant-based)

Instructions
