Serves 14
Ingredients
Muffins:
1 ½ cups gluten-free flour
½ cup almond flour
1 tsp ground ginger
½ tsp pumpkin spice
1 tsp baking powder
½ cup melted coconut oil
½ cup Sue Bee Sea Salt Honey
½ cup milk
1 ripe banana, mashed
2 tsp vanilla extract
Crumble:
¾ cup almond flour
1 tsp cinnamon
1 tsp vanilla extract
⅓ cup melted coconut oil
Icing:
1 cup powdered monk fruit
1-2 tbsp milk
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mix gluten-free flour, almond flour, ginger, pumpkin spice, and baking powder.
In another bowl, combine melted coconut oil, Sue Bee Sea Salt Honey, milk, mashed banana, and vanilla extract. Mix until smooth.
