Serves 8-10


Ingredients

  • 3 cups organic flour

  • 1/2 cup cornmeal

  • 1 tbsp Angel Bread Improver

  • 1/4 cup monk fruit brown sugar

  • 1 tsp kosher salt

  • 1 tsp Angel Yeast

  • 2 tbsp honey

  • 1 cup water (110°F)

  • 1 large egg

  • 2 tbsp butter

  • 1 tsp cinnamon

  • 1 egg (for egg wash)

  • 1/4 cup non-fat milk powder (for dusting)

  • 1/2 tsp cinnamon powder (for dusting)


Instructions

  1. Dissolve Angel Yeast in warm water with honey and let it activate for 10 minutes.

  2. In a large bowl, combine dry ingredients—flour, cornmeal, bread improver, monk fruit sugar, salt, cinnamon, and milk powder. Add the yeast mixture, beaten egg, melted butter, and mix until a sticky dough forms.

  3. Knead for about 8 minutes until elastic and smooth.

  4. Cover the dough and let it rise in a warm spot for 1 hour.

  5. Punch down the dough, divide into 10-14 pieces, and place in a greased baking dish. Cover and let rise again for 30-40 minutes, then another 1-2 hours for a final rise.

  6. Preheat oven to 350°F. Brush the rolls with egg wash, bake for 15-18 minutes until golden.
