1 2/3 cups all-purpose gluten-free flour
1 tablespoon cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup brown granulated monk fruit
1/2 cup granulated monk fruit
1 tablespoon vanilla extract
1/2 cup Nutiva Virgin Coconut Oil
2 tablespoons blood orange zest
2 large eggs
1 tablespoon almond milk
1 tablespoon blood orange juice
Glaze
1 cup powdered monk fruit
1/2 tablespoon blood orange zest
1-2 tablespoons coconut milk
Toppings
1/2 cup crushed pistachios
2 tablespoons shredded coconut
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together the gluten-free flour, cornstarch, baking soda, baking powder, and both monk fruit sweeteners.
Add the Nutiva Virgin Coconut Oil, eggs, vanilla extract, blood orange zest, blood orange juice, and almond milk. Mix until smooth.
