Copycat Starbucks Pumpkin Bread (High Protein)

Serves 8 slices


Ingredients

  • 1 1/3 cup of organic flour

  • 2 scoops of Ready Nutrition Vanilla Whey Protein

  • 1 tsp of baking soda

  • 1 tsp of baking powder

  • 2/3 of granulated monk fruit

  • 1/2 tsp of chai spices (you can use the ones from tea bags)

  • 1 tsp of cinnamon

  • 2 eggs

  • 3/4 cup of vanilla greek yogurt

  • 2 tsp of vanilla extract

  • 1 cup of pumpkin puree

Topping

  • 1/4 cup of raw pumpkin seeds


Instructions

  1. Preheat the oven at 350F.

  2. Mix all dry ingredients for the bread in a bowl.

  3. Add in the rest of the ingredients until fully incorporated.

  4. Transfer silicone baking loaf dish.

  5. Top with the pumpkin seeds.

  6. Bake for 35-40 minutes.

  7. Let it cool down, slice into 6-8 slices and enjoy!
